Two local women brought their unique culinary vision to reality earlier this month, as the Waffle Mamas food truck made its debut during Lansdale’s August First Friday festivities.
“We are mashing waffles and comfort food together, because of our insatiable desire to be unique,” said Laura Borucki, who founded Waffle Mamas with her partner, Jessica Reynolds.
That unique combination proved to be irresistible to the people gathered around the truck, as an almost never-ending line to get a taste of the new foods formed early and continued throughout the night.
The desire to bring happiness with her cooking can be traced back to Borucki’s childhood.
“Growing up, I remember [Borucki] always throwing together parties and entertaining family and friends, and every gathering was centered around what kind of food was going to be prepared because that’s one way she took care of everyone,” said Reynolds, who also credits Borucki with expanding her taste pallet. “Laura was the one that made me look at food in a whole new way,” Reynolds added. “Before her, I never wanted to venture outside of my ‘food comfort zone,’ which basically consisted of pizza, cheeseburgers, and chicken fingers.”
“Now, Laura and I are able to spitball ideas together for new menu items, and I'm finding I have a passion for food that I never knew existed,” said Reynolds.
The duo made the decision to open a food truck, as opposed to a more traditional brick and mortar location, for several reasons. The lower start-up costs worked well for the two woman, whom also work other full-time jobs in addition to the work they put into the food truck. The flexibility in location also interested the entrepreneurs, as they could travel to events with relative ease. Now they hope to help the food truck scene gain a larger foothold in the suburbs.
Their unique menu came about as Laura experimented with a waffle iron, making things that were not traditionally thought of as waffles. With that in mind they set out to combine waffles with comfort food. The results include cheesesteak waffles, waffle wrapped hot dogs and a fried chicken and waffle sandwich, among others.
Even as their debut night was coming to an end, and some staff members could be seen breaking down equipment, people still wandered up to the window. It seems Lansdale had fully embraced the Waffle Mamas, and what started as an dreary afternoon ended with clear skies and a new business the North Penn area can proudly call their own.
